I love to cook, but admit I rarely cook for myself.
When I do decide to cook, I like to pull out my recipe cards and prepare
one of these favorites.

Chicken
Enchiladas
1 sautéed onion
2 cans cream of chicken soup
1 8-ounce container sour cream
8 ounces grated cheddar cheese
2 large chicken breasts
Boil chicken until done. Cut into small pieces. Mix
chicken with rest of ingredients; leave out some cheese to sprinkle on
top. Place 2 tablespoons of mixture inside 12 corn tortillas and roll up.
Place seam side down in 9x13 baking dish and pour remaining mixture over
top. Sprinkle with cheese. Bake uncovered at 350 degrees for 20-25 minutes
until bubbly.

Lemon
Squares
1 cup flour
1/3 cup plus 1 tablespoon powdered sugar
1/2 cup cold butter
4 eggs
3/4 cup sugar
1/2 cup bottled lemon juice
Mix flour and 1/3 cup powdered sugar in a
medium-sized bowl. Cut in butter until mixture resembles small peas.
Mixture will be dry and crumbly. Press in bottom of ungreased 9" square
baking dish. Bake at 350 degrees 15 minutes or until lightly golden.
Beat eggs at high speed about 3 minutes. Gradually
add sugar and continue beating 1 minute or until mixture is thick. Stir in
lemon juice. Pour over hot crust and bake 15 minutes or until golden.
Sprinkle with remaining powdered sugar. Cool in pan on rack. Cut into
squares. Makes approximately 16.

Lime
Meltaways
1 1/2 sticks (3/4 cup) softened butter
1/3 cup powdered sugar
1 3/4 cup flour
2 tablespoons cornstarch
1/4 teaspoon salt
1 tablespoon vanilla
2 tablespoons lime juice
Zest of two limes (about 2 tablespoons)
Cream butter and powdered sugar until fluffy. Add
vanilla, lime juice and zest. In another bowl, add together flour,
cornstarch and salt. Add dry ingredients to butter mixture and mix well.
Make into logs approximately 1 1/4" in diameter and roll in waxed or
parchment paper. Chill at least 1 hour.
Slice logs into 1/8" rounds. Bake at 350 degrees
until golden, 11-15 minutes. While still warm, place in powdered
sugar-filled bag and toss to coat. Makes approximately 3 dozen.
